It’s the final holiday countdown…

Below are some of my top charcuterie board tips (after making thousands for my organic food businesses), plus four casual holiday meal ideas, my most popular side dish that can feed an army and some final Christmas inspo.

Here are four casual holiday meal ideas so you can spend more time with your family. The meal ideas are simple, yet you can dress them up and customize all of these options.

Pair them with my apple walnut bleu cheese salad or build your own with some of my favorite winter salad ingredients

This loaded baked potato casserole was a customer favorite when we owned our organic meal delivery service. It’s all of your favorite flavors from a loaded baked potato in casserole form.

Loads of sharp cheddar, crumbled bacon, chives, scallions and sour cream create an irresistible casserole that will feed an army.

We have Christmas in Fort Worth with my husband’s family this year and this has been our Christmas lunch for 3 years running.

His younger brother and I make smashburgers with all of the delicious toppings and serve with fancy red wine, a salad and oven-baked fries or loaded baked potatoes.

This crowd-pleasing Grain-Free Spaghetti Pie Bake uses your favorite bolognese recipe with a creamy cheese mixture and your favorite spaghetti.

No formal recipe on this one- but just a little inspiration for a fabulous holiday meal.  My toddler enjoyed four portions of it!

I jokingly say I have a love/hate relationship with charcuterie boards because I have made so, so many of them over the years. My organic meal delivery service and grab & go shop offered custom grazing board offerings any time of year.

I made them often, changed my ingredients based on seasonality, and really developed a streamlined process to build them efficiently and set myself apart. Click HERE for the full post, how-to and even more inspiration.

When life gets overwhelming, I’ve been spending time focusing on small joys and romanticizing my everyday life. It helps me step back, recalibrate and see all that is truly beautiful in this world. My motto for the new year? A larger focus on romanticizing everyday things, even if they seem mundane.

Stay tuned for my nourishing comfort food series in January!
